Foodie Friday-High on Pie

 I know I've told ya'll before, but I LOVE to cook. By cook of course I mean bake. I like to cook food, but I pretty much stick to the basics. Chicken fried rice is about as crazy as I've gotten with dinner lately.

Last weekend I came across an AMAZING recipe for Lemon Icebox Pie from Southern Plate (a little side note here...I want to be Christy Jordan when I grow up...screw Martha Stewart).

Anyway, we had it for dessert Sunday night after a dinner of fried catfish and jalapeno hushpuppies.


The boy child's reaction?

"Momma...I think I just got high on pie"

I sure do love that boy.




So. freaking. good.

Wordless Wednesday and Thankful Thursday, all wrapped up in one

I didn't do my usual Wordless Wednesday yesterday because I was lying on my couch dying. Well, it felt like it anyway. I haven't been that sick in a long, long time. I'm still weak as a kitten today and I have a throbbing headache, but I'm conscious and at work (ugh). At least I'll have a long weekend coming up to recover.

So I'm doubling up today:

Always remember, the face people show you in public (or on Facebook) can be very different than their real one.

Now, on to my thankfuls for the week:

I'm thankful...that I was able to hold down breakfast (it doesn't take much to please me, ya'll)

I'm thankful...that my sweet husband has given me the opportunity to finish school, something that I have always aspired to do, but until recently lacked the funds to achieve.

I'm thankful...that I am about to start my last semester at MCC. I will graduate in August and start at Mississippi State the day we come back from vacation

I'm thankful...for the little things. My daughter's laugh, my son's sweet compliments about my cooking and my husband telling me I'm pretty (I know his eyes are bad, God love him)

I'm thankful...that it is finally (if not unofficially) summer!!

Ahh...fun times

Harley had an EPIC drama queen moment this afternoon.

One of Chris's friends is over watching the race and I fussed at her for pouring her juice out.

I guess I embarrassed her because her lip quivered for minute then she had an out and out screaming, squalling meltdown.

Chris picked her up and she buried her head in his neck.

It was hysterical

Harley has a new favorite past time

Silly girl has figured how to take pictures of herself on my phone. She will come take it from me and say "cheeeeeeese" and whine until I get to the camera. She's not half bad, for a toddler.

It's WAY too pretty to be at work today...

Since it's too pretty to be here, I have wicked summer fever (I booked our condo for our vacation today), I would much rather be laying myself on the beach, cocktail in one hand, book in the other, gazing out over the Gulf of Mexico and NOT being here today.

So, instead of anything really profound to say today, I will leave you with this:

(Almost) Wordless Wednesday

Yeah yeah, I know I've posted something today, but this was too good to hold to til next week:

It's been one of those weeks



A new diet trend

I am officially on a new diet. It's super easy to stick to and you don't need anything special to do it.

Well, except you need a toddler.

Apparently, to a 17 month old, all food magically tastes better when it comes off mommy's plate.

I don't remember the last meal I ate that I didn't have to share. Harley will eat ANYTHING you put in front of her now; any meat, any vegetable, any fruit, it doesn't matter. But it has to come off my plate or out of my hands.

Last night I made stuffed shells for me and the boys, and made her a peanut butter sandwich, thinking she wouldn't want the shells. HA! She threw the sandwich to the dog (who thoroughly enjoyed it) and started reaching for my fork. She ate almost half of my dinner.

This morning I made her usual cini-mini toaster waffle thing and sat down with a banana. I got to eat about 2/3 of the banana (AND she ate her waffle).

Maybe I finally found a diet I can stick to.
